Monosodium glutamate dangerous only in large quantities

Monosodium glutamate is an ingredient that adds umami to dishes – the fifth flavor along with sweet, salty, sour and bitter. It is used to enhance or amplify the taste of certain foods in cooking. Studies suggest that this ingredient is responsible for several nervous, metabolic or heart problems. However, “glutamate can be considered safe when consumed in moderation,” says biochemistry professor Nicolas Bordenave.

Other studies also show that glutamate has no effect on health when it is consumed in normal amounts. According to Nicolas Bordenave, the shortcuts used by Health Canada experts when analyzing the composition of various foods are the cause of glutamate’s bad reputation.

The professor of biochemistry explains to us that the studies that verify the toxicity of food are not all reliable and that most of them only focus on the data that feed our fears.
